Easy Biscuit Recipe

Ingredients: 2 cups all purpose flour 1 Tbsp baking powder 1 Tbsp sugar 1 tsp salt 6 Tbsp butter 1 cup milk Directions: Preheat oven to 425 degrees. Whisk together flour, baking powder, sugar and salt. Cut in butter with pastry blender (or mix with your hands) until the mixture resembles coarse crumbs. Slowly add milk and stir until dough just comes together. Dough will be wet and sticky. Turn dough out onto a lightly floured surface and knead 15 times. Gently roll or pat dough to 1 inch thick. Cut biscuits with biscuit cutter. Place biscuits on an ungreased baking sheet. Bake 12-15 minutes or until golden brown. Makes 6 big biscuits.

Easy Meatballs

Ingredients: 1 lb lean ground beef or turkey 2 garlic cloves, minced or put through garlic press 1/3 cup onion, finely chopped 1 tablespoon dried parsley 1/4 teaspoon pepper 1/2 teaspoon oregano 1 egg, beaten 1/2 cup dry breadcrumbs Directions: Preheat oven to 350 degrees. Mix all ingredients and shape into meatballs, about 1" in diameter and place in a mini-muffin baking pan, one meatball in each muffin cup. Bake for 15-20 minutes until cooked through. Make sure internal temperature is at least 165 degrees for turkey meat.

Four Bean Salad

Ingredients: 1 (15.5 oz) can of cut green beans 1 (15.5 oz) can of cut yellow wax beans 1 (15.5 oz) can of chickpeas/garbonzo beans 1 (15.5 oz) can of kidney beans 1 red onion, chopped 1 green bell pepper, seeded and chopped for dressing: 1/2 cup of honey 1/2 cup of red wine vinegar 1 Tablespoon green onion, chopped 1 teaspoon season salt (or Mrs. Dash table blend) 1/2 teaspoon dry mustard Directions: In a medium bowl, combine green beans, yellow wax beans, chickpeas, kidney beans, red onion and green pepper. In a bowl, blend together honey, vinegar, green onions, season salt and dry mustard. Pour over the bean mix. Cover and marinate for 4 hours, stirring occasionally. Macaroni Salad

Ingredients: Click here for printable version 4 cups uncooked elbow macaroni 1 cup mayonnaise 1/4 cup white vinegar 1/4 cup sugar 1 1/2 tablespoons yellow mustard 1 1/2 teaspoons salt 1/2 teaspoon black pepper 1 large onion, chopped 2 stalks celery, chopped 1 green bell pepper, chopped 1/2 cup grated carrot 2 tablespoons chopped pimento peppers Directions Boil the macaroni according to package directions. Rinse in cold water and drain. In a large bowl, mix all ingredients. Refrigerate overnight.

Coleslaw with Dressing

Ingredients: 1 14oz bag of pre-washed coleslaw 1/2 cup mayonnaise 2 tablespoons white sugar 1 tablespoon vinegar 1 1/2 tablespoons lemon juice 1/2 teaspoon ground black pepper 1/4 teaspoon salt Directions: Use a whisk to mix mayonnaise, sugar, lemon juice, vinegar, pepper, and salt together in a bowl until smooth. Put coleslaw in bowl and pour dressing over coleslaw. Mix together well. Let sit in refrigerator for at least 20 minutes. Cook's Note: This is a simple, mild coleslaw that's easy to make with items you should have in your fridge and pantry.
